Our First Anniversary



On Sunday, Todd and I celebrated our very first wedding anniversary. I can't believe it's already been a year since the wedding! Anyway, our big adventure for the day was to pull out our frozen wedding cake (yes, it's been in the freezer since LAST June 18!) and have the traditional anniversary "treat" of eating it and remembering the fun of the wedding. Now I will admit that I was really into keeping this tradition alive. Todd asked me repeatedly throughout this last year if we could throw it away, and when I would say no, he would ask if you could get food poisoning and die from eating year-old cake. I told him there was no way he was getting out of it, but to make things easier to handle, we went and bought a fresh piece of cake from the bakery just in case.

As for our wedding cake... besides the fact that the cake was as hard as a rock (here's Todd trying to cut us two pieces) and we had to microwave it just to be able to use forks, it really wasn't too bad... our cake was white with layers of strawberry filling and buttercream icing, and it kept pretty well. Okay, the icing was pretty gross. I gave up after about half a piece, and Todd ate about 3/4ths of one before we switched to the real celebration -- champagne and fresh bakery cake. Now that was something to toast to! :)

So, here's our advice to anyone getting married... keep the tradition. Freeze the entire top of the cake (which is more than you will ever be able to eat), let it take up a whole shelf in the freezer, pull it out and get ready to have fond memories and...



rock-hard freezer-burned cake.


Oh yeah, and make sure you get some fresh cake to do the real celebrating with! Here's to many more happy years to come! :)

My Teaching Career?

I just finished a teaching program called Texas Teachers on Friday. It was a really intensive program that taught us all sorts of things about pedagogy, lesson planning, rules and discipline, legal issues, and teaching interviews. I also had to take a state test yesterday (4-8 Math) to see if I was "qualified" to teach junior high school math. I think it went pretty well, but I'll know for sure when I get my scores back in July. Hopefully this will help me land a teaching job this fall!

I also have been doing a little scrapbooking lately... here's my recent page. It's about Toby and his graduation from puppy class in April. I know the detail's not that great in this picture, but hopefully you get the general idea. I was really proud of this page, even though I totally copied the idea out of a scrapbook magazine! I still have wedding pages to finish, not to mention countless college events. And don't even get me started on all of the high school stuff! That will definitely be left until I finish the others. Maybe now that I'm finished with this program, I'll have more time to scrapbook all of these great pictures I have! :)
